Sensory Lab has recently opened its fourth store in the Melbourne CBD at the base of Rialto Tower on the corner of King and Collins Street. Proving that Melbourne can’t get enough of Sensory Lab coffee, the new café features more different blends and more filter options than ever before, presenting coffee made perfectly and perfectly made food.
Alongside the coffee, the new Sensory Lab boasts an impeccable new “grab and go” menu designed by head chef Daniel Dobra. The scrumptious to-go options include the Super Greens; braised kale with toasted garlic and sherry vinegar, dressed with whipped feta cheese, pine nuts and baby courgette as one of the many options in the ‘High Tops’ category. The McBagel features a 5 & Dime Bagel with crispy bacon and egg, or the Almost Collective Bagel combines smashed avocado with herbs, toasted pepitas and dried chilli flakes.

- Underground – Heirloom beets & carrots roasted
with garlic, thyme & sherry vinegar, horseradish
cream cheese, shaved radish and fine herbs.
- SENSORY Rueben – Shaved New York pastrami,
kosher pickles, Dijon, Swiss cheese, cheddar
cheese, kraut and spicy mayo
- Smokin’ Joes Chicken – Shaved smoked chicken
breast, butter lettuce, onion, tomato and honey
Add to the menu vegan salads with sprouted mixed beans and legumes, grilled sticky and smoky eggplant with soba noodles, cheeseburger and a Toriglioni pasta salad dressed in spiced beetroot pesto.
Inspired by the warm and buzzing espresso bars of Europe, the newest Sensory Lab was designed by Esteta Studios (Fonda Bondi). The focal point is a monolithic tarnished bronze counter behind which the burgundy framed structure highlights the kitchen where the chef and production are showcased at work.
As part of the opening, Sensory Lab is offering $2 coffee through the Skip App to avoid long waits.
