THE SAINT AND THE MADAME FAMILY TRUFFLE DINNER
ST. ALi and Madame Truffles reunite for the seventh year in celebration of the truffle season. Winter only means one thing to Melbourne foodies – the return of the food world’s black gold – and this decadent four-course dinner, hosted by the Saint and the Madame, will show off the best truffles from around the country.
ST. ALi Guest Chef Andy Hearnden has crafted a menu to showcase Madame Truffles’ seasonal best-selling fungi from Western Australia, Tasmania, New South Wales and Victoria in a winter warming menu.
Australia is the fourth largest truffle supplier in the world, and Madame Truffles is Australia’s only specialist truffle retailer. The trufferie supplying this year’s dinner, Braidwood, took home the gold at the Royal Agricultural Society of Victoria (RASV) last year, so expect the very best in flavour.
Guests will enjoy carefully selected wines from boutique wine bar Smalls, paired with Andy Hearnden’s rich, truffle-infused menu.
The menu includes:
- Hot and cold hens egg, truffle caviar
- Duck liver parfait, bacon jam, truffle brioche
- Beef short rib, truffle celeriac puree, smoked brussel sprouts
- Truffle Portuguese tarts
Vegetarian options available on the night include:
- Mushroom parfait, red onion jam, truffle brioche
- Cauliflower steak, truffle celeriac puree, smoked brussel sprouts,
truffle beurre noisette
